--- HALIBUT CORDON BLUE ---
This is one of the best halibut recipes for Blue Cheese lovers.

Ingredients:

Halibut fillets (four 8 oz portions, thawed)
Blue cheese (one cup, crumbled)
Mushrooms (two & 1/2 cups, sliced)
Black pepper (two tablespoons, course ground)
Cream of Mushroom soup (one can)
Sour cream (equal amount to mushroom soup)
Mayonnaise (equal amount to mushroom soup)
(adjust ingredient amounts slightly to taste)

Fold soup, sour cream and mayonnaise together,
fold-in Blue cheese and TWO cups of mushrooms.

Bake the halibut fillets in a pre-heated 400 dg
oven for four minutes. Remove from oven and
pour the liquid off. Pour the mixture over the
halibut fillets, sprinkle the black pepper and the
1/2 cup of sliced mushrooms over the top and
return to the oven for an additional four minutes.


--- HALIBUT ON THE GAS-GRILL ---
Of all the halibut recipes this is the quickest to fix.

Ingredients:

Halibut Fillets (any amount you want)
Ranch Dressing (any amount, Hidden Valley)
Lemon-Pepper (any amount you want)
Paprika (any amount you want)

Pre-heat the grill to it's maximum temperature.
Place a large piece of heavy-duty foil on the
grill with the edges turned-up to form a pan.
Place the halibut fillets on the foil-pan with the
skin-side down. Close the lid and grill for four
minutes. Open the lid and drain-off the liquid.
Pour Ranch dressing over the top of the fish
as you would a bar-b-que sauce, sprinkle paprika
and lemon-pepper over the top. Close the lid and
continue to grill for an additional four minutes.
With a spatula, lift the fish from the foil-pan.
The skin will remain firmly stuck to the foil-pan
for an easy clean-up after the grill cools down.


--- CAPT. BRUCE'S BEER-BATTER HALIBUT ---
This is one of my favorite halibut recipes.

Ingredients:

Halibut fillets (cut into 1" thick strips, thawed)
Batter mix (Tempura batter-mix, from store)
Beer (stout malt-liquor style beer, warm & flat)
Seasoning (Old Bay brand seasoning mix)
Flour (Wondra brand finely sifted flour)
Cooking oil (olive or peanut oil is best)

Mix the batter-mix with the beer according to
directions on the batter-mix box. Pre-heat the
oil to 350 dg (use a thermometer). Dust the
halibut fillets in the dry flour, dip the halibut
fillets in the batter and drop them in the oil.
Turn them with a slotted spoon or tongs until
they turn a golden color (about a minute or so).
Remove them from the oil and immediately
sprinkle the Old Bay seasoning over them.

---- Maple Syrup Glaze for Baked or Grilled Salmon ----

Ingredients:

1/4 cup of Real Maple Syrup
1/2 cup of Brown Sugar
3 tablespoons Virgin Olive Oil
1/4 teaspoon Sea Salt
1/2 teaspoon coarse ground Black Pepper
4 8 oz Salmon steaks or fillets

Mix all ingredients in a bowl, except the Salmon Apply the glaze to the Salmon and bake in a 400 degree oven for about 12 to 15 minutes or on the grill for about 10-12 minutes.


--- Chipotle Pepper Glaze for Baked or Grilled Salmon ---

Ingredients:

1/4 tablespoon of Chipotle Pepper powder
4 tablespoons of Butter
2 tablespoons of Honey
1/4 teaspoon of Sea Salt
1/2 teaspoon coarse ground Black Pepper
4 8 oz Salmon steaks or fillets

Melt all ingredients in a bowl, except the Salmon,
Apply the glaze to the Salmon and bake in a
400 degree oven for about 12 to 15 minutes
or on the grill for about 10 to 12 minutes.


--- Cinnamon Honey Glaze for Baked or Grilled Salmon ---

Ingredients:

1/2 tablespoon of Cinnamon powder
4 Tablespoons of Butter
2 Tablespoons of Honey
1/4 teaspoon of Sea Salt
1/2 teaspoon of coarse ground Black Pepper
4 8 oz Salmon fillets or steaks

Melt all ingredients together, except the Salmon,
Apply the glaze to the Salmon and bake in a
400 degree oven for about 12 to 15 minutes
or on the grill for about 10 to 12 minutes.
